"Blessed are the Cheesemakers"? Surely he's referring to all
manufacturers of dairy produce. What would be the point of excluding
buttermakers, whey makers, etc?

Personally I don't believe you should write in permanent ink on a
certified copy - better to use a thorough indexing system or
yellow stickies.
