Hi Ash,
You have asked a question that requires knowledge of TRA assessment
procedures to answer. Most contributors to this site do not have that
knowledge.
TRA has three assessment pathways. These are detailed in their
Uniform Assessment Criteria (http://www.workplace.gov.au/NR/rdonlyres/
FA0FD1E1-8B74-4C11-AFBB-2C159890FF80/0/
UniformAssessmentCriteriaSeptember2007.pdf). I think you will be
disappointed that you will be unable to be assessed as a cook under
their assessment criteria, unless you can demonstrate an "Informal
Apprenticeship". This would require that you underwent a structured
training program with one organisation over a period of time, and that
you had at least 900 hours of formal training.
In the past there was another pathway through work experience.
However, this is no longer available as it was found that some people
were abusing the system.
If you are really keen to migrate to Australia you might consider
taking the education pathway. Many colleges offer a 2 year Diploma of
Hospitality program that includes a formal trade qualification in
Commercial Cookery. It is currently a very popular pathway to
Austalian permanent residence. These programs are recognised by
Trades Recognition and those completing the requirements receive
positive skills assessments and, ultimately, achieve their PR.
