I assume you meant you were applying under Skilled Worker Class?
And obviously was submitted before Feb 2008 (the procedure was

High demand? Did you mean that the occupation is in the list of
38 occupations allowed to submit in Skilled Worker after Feb
2008? Whether these occupations are in high demand is debatable.

In any case there are issues for you to include that occupation:
- Since your application will be under Skilled Worker before Feb
2008 category, this list of occupations has no relevancy for
your case; unless you want to withdraw your application and
reapply.
- Your occupation can be used - either before or after Feb 2008
- only if you can prove that it is in skill level A, B, or 0 (B
for cook); which means you can show appropriate education,
apprenticeship, or many years of professional experience for
this occupation. Find the correct NOC for your occupation and
see the requirement here:

AFAIK as long as those letters and documents give enough
information - your job descriptions, how long you work, and
whether it was full time or your average hours if it was part
ime - then you should be able to submit it. That said, do some
research and find your colleague and supervisors from that job
that willing to give more information if needed.
Keep in mind that for this category you will need at least 1
year full time - or part time equivalent - of job with NOC in
skill level A, B, or 0. Without that you will be ineligible,
regardless of your score!
