Thank you Boiler, I truly appreciate your help.

So, if needed, I hand the I-601 to the officer directly at the
interview, not mailing it to some processing center in the US afterwards
and then wait for another interview or anything like that?

What about my wife? Nobody's going to interview her? I mean, the proof
of her employment, etc. is going to be whatever she submits with the
original application? The processing may take up to a year (or so I've
heard), wouldn't they be interested if she's still employed or still has
the money in the bank?
