This seems like an imagined correlation between quality of butchery and
reluctance to hire night shift workers. Maybe it's the lousy greengrocers
who don't want to stay open later.

And if they're so good, why wouldn't their customers stick with them if
they're only open while the banks are? After all, it was good enough for
their customers before? Or is it that enough people actually prefer the
convenience, once they're finally given a choice?
