I suppose one of the good things about flying into Nagoya is that even
if you get a train that is standing room only (which another poster
correctly noted is typically the beginning and ending of the holiday
period) you will not be standing for too long to either Kyoto or Tokyo.
In general I suggest getting a rail pass and planning out a rough
itinerary; then when you arrive at the same time you validate your rail
pass make your first shinkansen reservation (whenever that might be).
Then even if the train is packed you will be assured of a seat. But
note on a crowded train luggage can present problems; I suggest packing
as light as possible.
