In Southeast Asia, that will require getting very far off the beaten
track. As compared to most parts of the world, the region receives a
very large number of visitors in a fairly small area.

You will see a huge number of tourists in some of those places
(especially Chiang Mai and the Full Moon Party), and most of the others
you mention also have a moderate tourist presence.
Your best bet is probably either Myanmar (especially outside of its
three major destinations - Yangon, Mandalay, Bagan), northeast
Thailand, or one of the outer islands of Indonesia (check the security
situation before you go since there are sporadic conflicts on some of
the islands)
