Now that's an interesting question. I live in HK, and I almost never see
strollers, or kids, out and about. But I work during the daylight hours, so
it might mean that people don't bring their kids out during the evening rush
hours, or the dinner hour. I have seen strollers on Saturdays, and there are
lifts at the MTR stations, but when the subways are packed, there's no way
you won't be heavily in the way. I think folks must use taxis a lot, and
have their Amahs carry their kids around.

If you are only doing Disneyland, Ocean Park and the neighborhood mall, then
strollers will be fine, but use the taxis.
