We just spent 3 days in Juan Dolio in DR at a resort, but we aren't
the resort type. That was pretty much enough. Santo Domingo was
good for about 2 hours. I would change resorts a couple of times so
you can experience a couple different areas and a different menu!

But there is nothing to do inside the country.
