It seems that your friends wish to market a familiar product/service
(food/restaurant) in an unfamiliar market (somewhere in the Caribbean).

My suggestion would be to look into which islands are more open to foreign
investment where it is possible for your friends to purchase land. The
reason I say this is that it would be terrible for them to build a
successful business then be forced out of their lease, etc.

Next they should visit a few islands over an extended period of time. They
are not just opening a business, but choosing where they are going to live.

I would even consider looking into which islands have new resorts being
built because this may be a telltale sign of future growth. Since your
friends are willing to take a chance opening a business in another country,
it would be good for them to get in on an up and coming market as opposed to
a well established market with strong local competition.
