A Cabaņa on Mexico's Caribbean coast comes to mind. These are simple
cabins with palapa construction. The amenities vary from sand floor, no
electricity to everything you'd expect from a deluxe hotel room.
Here is a list of some cabaņas with local Mexican phone numbers. Some
may have web pages. Almost all are located on a beach with a restaurant
nearby.

Alternatively, I have stayed at some cabins in Dominica with a million
dollar view. The only drawback for you is that you'll need to rent a
jeep to get to a beach or restaurant. The location is somewhat remote.
Still, you may want to stay there just for the view alone. The place is
called Sea Cliff Cottages. I found the owner to be very nice and
helpful in providing information about the area.
