Here's a link to the dining options on Star Princess, straight from
Princess's website.

Looks to me that you can choose the Capri Dining Room if you're stuck
with Personal Choice, and still get the same menu as in the Amalfi
traditional dining room. There are also several specialty restaurants
to choose from at no extra charge, and a few with a nominal surcharge.

I opt for late dining - haven't yet been on a cruise with "freestyle
(Norwegian Cruise Line" or "Personal Choice" (Princess). Given the
choice between early or anytime, I'd probably opt for anytime so that
my evenings aren't rushed, getting to the dining room after a full day
in port. I like to maximize my time in port, and sometimes that
overlaps with the start of the traditional early seating.

I enjoy a traditional dining room on a cruise. I like having the same
table, same servers, same dinner companions (only once has this not
worked out well). While some claim that you can accomplish all these
things with personal choice, I'm guessing most couples end up either
sitting alone or are seated with strangers each night...having to go
through the "my name is", "I live in", I do such and such for a living"
conversations each and every night, which is just not my thing. I like
to get that over and done with the first night, and then move onto more
interesting conversation as the week progresses.

If you were thinking of a table for two in the traditional dining room,
then personal choice will work for you fine, I would think.

If you're really set on traditional dining, I'd seriously consider the
late seating. You can always skip the dining room if you want to eat
earlier or try a specialty restaurant during the week. You don't HAVE
to be at your assigned table. But, I'd let my waiter know so the table
doesn't wait for you...
