Russ, you don't have enough days of the week. Assume a Sunday departure.

Sunday, depart
Monday at sea
Tuesday at sea
Wednesday port (say San Juan)
Thursday port (say St. Thomas
Friday port (say St. Maarten)
Saturday at sea
Sunday at sea..... oops! We were supposed to be back in Texas on Sunday.

8 day itineraries could possibly be done. Possibly alternate a 9 day
Eastern or Southern with a 5 day Western. That could work.

But 7 day cruises from Houston or Galveston are pretty much stuck doing
Western Caribbean in one form or another.
