Be sure to tell her that she's not limited to just one
selection from each category. I've never had a request
turned down. I usually order a couple appetizers and an
entree, but have know people who order more. The waiters
are very good about this and will interlace your requests
with the others at the table so that your second appetizer
might be served while others are receiving soup, for instance.
One of the other things I enjoy is the cheese selection
after the meal, instead of a dessert.
