Alaska is my home. My opinion is that everything is a "must
see excursion." ;-) I live in Anchorage now, but I
used to live in Juneau. It's gorgeous there.
Which are the "best" cruise shore excursions really is
dependent on your budget. If you are trying to make the most
of your budget, then in Juneau you should visit the
Mendenhall Glacier -- it's massive, and you can get up close
and personal with it. There are coach tours that will take
you to the visitor center and glacier. It's really too far
from the cruise ship dock to try to do it on your own. Don't
miss it, it's really incredible.
If you have a larger budget, consider one of the fantastic
flight-seeing tours. There are either fixed wing or
helicopter tours. Helicopters are in some ways better because
they can land right on the ice field / glacier to let you get
out and explore. You go right up up on top of the Juneau Ice
Field, which is about 1,000 square miles of ice, mountains,
and glaciers. (Don't worry, they provide insulated boots so
you won't get frost bite). Another Juneau flightseeing
option includes food -- there are trips up the Taku Inlet that
include a traditional Southeast Alaska "salmon bake" dinner.
