Sailing Carnival is a joy--excellent food, relaxed atmosphere, with just
enough formality (2 nights) to make it like the old cruises, but without
the stiffness. (I know, some don't care for the "party ships"; but, I
think they are fun.)
Didn't really care for the Destiny, and sailing out of Puerto Rico.
Comraderie among pax was lacking, partially due to the number for whom
English was not their native language, AND because pax could join/leave
the cruise at any port (not bound by the Jones Act). I would suggest
compromising on the itinerary a bit, and choosing one of the newer
ships. Conquest is a newer, bigger, grander version of the Destiny.
I know that a lot of folks are also put off by the gaudiness of Carnival
decor, but, heck, that's to make you know you are somewhere other than
"back home" in the local Holiday Inn.
My $.02.
