We called Carnival today and they said that if we didn't want to use a
credit card, then we would have to leave a $100 per person deposit. Of
course we'll use our credit card, but again, this was a policy that was
never disclosed to me while booking :(
So would it be correct to assume that cash cannot be used anywhere on the
ship during the cruise?

Rosalie, all cruise lines issue each passenger a sign and sail card,
but it may be called different things on different cruise lines. You
may not of used yours for anything, but I would bet that you had one
issued to you.
