When you check into a hotel or rent a car you will find that they swipe
the card to establish a line of credit with your credit card company,
the cash deposit serves a similar function.

Cash is useless for purchases on the ship, but widely accepted as a
medium of thanks. why no cash, it keeps employee honesty issues to a
minimum.
