I took my first windjammer cruise last year about this time on the :"Yankee
Clipper".

The windjammer cruises uses older vessels and certainly does not have all
the bells and whistles of a regular cruise ship. The amount of wind is
proportional to the amount of sailing these ships do. The week I spent ,
the winds were light and we motored a fair amount.
I have also heard of folks taking one of these who powered under sail most
of the time. I guess it is just luck of the draw.
I did enjoy the experience and am considering taking another windjammer
cruise soon.
I other choices are the " star clippers " and the " windstars' but these are
also subject to the wind and overall spend a fair amount of time powering
with the diesels. These 2 choices are excellent but are fairly expensive.
