Todd, it stems back to the era where only the affluent were able to
cruise...they wore formal clothes to dinner every night.
It made dining each night a grand experience...It is lovely when most
everyone complies and dresses in tuxedos or dark suits with the women in
their gowns and finery...It gives the dining room a ballroom appearance and
is quite lovely...Now that it is possible for most every one to cruise, it
has become much more relaxed... Now, cruising is considered as one of the
many ways to take a vacation...The cruiselines still like to keep some of
that old tradition by having two formal nights on 7 day cruises and more if
the cruises are longer.

NCL has broken away from this concept by having Freestyle Dining, but still
offers formal dining in one of its restaurants for those who wish to go the
formal route those nights. As you know, people are dressing down more and
more in everyday living and it has now extended to cruising; some times to
an extreme and poor taste. But people argue that it is their vacation and
they will dress the way that they want. They completely ignore the dress
codes requested and sometimes they are denied entrance and sometimes they
are not.
Hope that answers your question.
