People like you who have realistic expectations are usually happy cruisers.
FWIW, most people who go on NCL have a great time. The food in the dining
room is better than the food on the buffets. The food in the specialty
restaurants is better than the food in the main dining rooms. If/when I go
on NCL again, I'll eat most of my meals in the dinning rooms.
NCL still does a good job with their entertainment. Usually, their big
production shows are pretty good and they have good musicians working the
bars and lounges.
Service is spotty but if you are patient and in some cases, persistent in
making your wishes known, sooner or later things will get done.
And while I said that I get more complaints about NCL then all other cruise
lines combined, that doesn't mean that everyone hates NCL. Most people go
on their ships and have a good time.
Have fun.
