I've had sons work as food delivery guys where they charge a small
delivery charge ... The owner uses that to pay an hourly rate to the
drivers (even though they are independent operators by definition) ...
so they get something consistent ... whether it is a busy night or a
slow night ...and overall it evens out for the owner ... their extra
income on busy nights comes from more tips from more deliveries ...
