All of the mass market lines require an adult on the cabin booking, but will
happily set up the cabin arrangements once aboard so that the kids are in
one room and the adults in another. Again, another question the OP should
direct to Sea Dream so they get the most desirable cabin arrangements.
Traveling with a nanny sure makes the trip easier for all concerned,
although the idea of the nanny sleeping in the same cabin as the kids
creates the same 3-in-a-room issue.
I wouldn't be surprised if that's a non-issue. The stateroom couches may
make out into a bed; if not, it would only take linens and bed pillows to
make a couch into a twin bed just right for a 9- or 10-year-old.
