In Germany you have to declare what religion you have, so that in case
you are protestant or catholic they can deduct the church tax from your
income and pass it to the appropriate church.

In case you don't want to pay church tax, simply declare no religion.

In Italy you have no chance to avoid paying the church tax - they don't
ask what religion you have and deduct the tax for the catholic church
whether you are catholic, protestant, muslim, buddhist or atheist.
