I know that a lot of it was invented along the way. In theory, God gave only
a handful of commandments to the Jews, but then rabbis spent centuries
"interpreting" these to make up new laws that had the same legal force (which
to me is blasphemy, although Jews seem willing to overlook this). Finally
they got up to 613, but they are still interpreting and reinterpreting these,
often with an eye to working around them (as if God cares nothing about intent
and only looks at actions).
