One of my favorite day trips was taking the Docklands Railway (am I close?)
all the way out to the end -- you'll get to see some cool architecture. From
there, take the walkway under the river (really!) and go to Greenwich. There
are several interesting museums there. When I did it, it was a sunny
afternoon and I took a boat back to the city.

Also...look for London Walks. It's covered pretty well in most tourist
publications. There's a significant number of 3-4 hour walks, usually themed
(I've taken the Beatles London, Historic Mayfair, and Christoper Wren's
Churches, just to name a few). The guides are great -- often actors or even
professional historians who really make the experience fun. I can't say
enough about how good they are.
