Well, there's PC-software to calculate "pretty routes". You can
configure the software to score roads with corners, or forests, or
lakes, or mountains, or....whatever you consider 'pretty', and then
make the software calculate the high scoring route.
Transfer the route to your gps unit, and you're done.
For now, I only know of a dutch software package, but software in other
languages may be out there as well.

They reduced the 2007/08 version to 20 euro now.
Originally, this software was developed for motorbike riders, because
they usually want "pretty routes" instead of motorways. From there,
they went on and produced the same for cars and bicycles.
