The conventional wisdom is to moderate seasonal temperatures by traveling
south-to-north in the spring (and north-to-south in the fall). You may avoid
some warm days in Provence this way, but it's not guaranteed.

Any time in May is an ideal time to be in either place, so I would only
follow that rule if there are no other considerations governing that
decision.
