It really doesn't matter - in a two week or less trip the weather
won't be different based upon where you go when.

If you plan on intense sightseeing in Paris and relaxation in
Provence, then you may prefer to see Paris first. If you plan on
doing a lot of driving or walking in Provence and relaxing in Paris,
then you may prefer to see Provence first.
