Here's a couple more thoughts. If anyone is organizing the sort of trek
you're looking for it would be the Explorean near Kohunlich. It's this
simply amazing luxury hotel in the jungle near the ruins. They specialize in
adventure treking sort of things. At the time I was there their prices
included meals and a lot of other amenities. I think it was around $160 a
night. In a quick search I wasn't able to find their site, but this should
be useful if you're interested:

place to talk to would be the Chicanna Eco-village:

suggested as the best place to arrange transportation to Calakmul. The
distances are such that you might want to consider some combination of
transportation that includes bicylces. IIRC it's seventeen miles from the
highway to the ruins. The manned gate to the bio-reserve is well in there,
but I don't recall the actual distance.
