Probably the largest numbers of tourists on those routes use the services of
Buquebus, which arranges tours of the kind you are looking for and also
operates the boats and hydrofoils. If you go to their Web site and can
understand Spanish, you'll see a map showing the various routes by land and
water, and a description of some of the tour packages available. One note:
When you see a price stated as $100, that is 100 Argentine pesos; they use
the "dollar sign" for their currency, so a price stated in U.S. dollars will
usually incorporate the letters US, like U$S100 or 100US$.
I can't remember if buquebus is www.buquebus.com or www.buquebus.com.ar
(Some Argentine Web sites have an "ar" suffix.
Good luck!
