Your Branson impression is basically correct -- it's geared to families
also -- if you're speaking of Branson the town. But, Branson is in the
Ozarks and there are mountains and lakes around, so you can make it an
outdoor vacation. It is, however, quite a bit out of the way from your
St Louis - Manhattan axis, particularly for just a weekend trip, and
over Labor Day will be particularly swamped with people, and traffic
(notorious).

I suggest St Louis from Thursday - Sunday, and drive over to Kansas CIty
on Sunday afternoon or Monday morning, considering traffic on Labor Day.

Kansas City is one of the most attractive cities in the U.S. (really!).
Head to Country Club Plaza (shops, bars, and restaurants). The
Nelson-Atkins Gallery is a good art museum. The Truman Library (museum)
and home are in Independence. (The Royals are out of town that
weekend.)
You're already set for St Louis.
