I actually think you can get away with NO reservations in all these places,
assuming one is willing to stay at the outskirts of some of the
destinations. For example, lodging is limited inside Grand Canyon National
Park, but there is plenty to be had in Flagstaff and other surrounding
towns. In Carmel, Monterey offers numerous hotels and motels. Ditto for
small towns outside Yosemite. Having said that however, I myself am the type
of traveler who would want confirmed reservations in advance. I'm just not a
big fan of sleeping in the car.
