Yes, Las Vegas in particular will have rooms at vastly differing
prices depending on circumstances. Besides weekends, you also need
to avoid big conventions or events, if you just want to drop in.
That can make it a little trickier, but the best value rates I've
had on hotels (anywhere) have always been drop-ins at places that
were totally dead.
For Friday or Saturday, though, especially in the summer, I would
absolutely make reservations whenever possible. Many people will
be traveling in those areas, but often only for weekend trips.
