We drove from the San Francisco area up the coast, around the Olympic
Peninsula, and then back down Interstate 5 (inland) in 9 days. It
was a very hectic trip (it was all the time we had, with the children
off school for a week), but it was fun. There is much more than
enough to see. We did not even go to Seattle at all, and went right
through Portland without stopping (we have been to both before).
You mentioned outdoors, so Olympic National Park is a must. You
could easily spend days there alone. Redwood National Park is also
a must. Oregon and California also have various interesting state
parks along the coast. Along the interior, there are the big
mountains of the Cascades range (Shasta, St. Helen's, Rainier,
etc.), as well as Oregon Caves National Monument, and other interesting
things somewhat further afield (Crater Lake National Park, Lava
Beds NM, etc.).
If you do this drive, you will have to pick and choose what to do.
Also, I recommend driving along the coast first, and then back in
the interior, because along the interior you have the option of
driving faster and not stopping, if necessary. The coast highways
are much less forgiving.
