I appreciate that these places have overhead. I consider live music worth paying
extra for, but not loud recorded music. The ambience may (or may not) attract
single women, but if I were in the market for single women I would not expect
that to be part of the bar's overhead.

So while I realize that the bar's overhead is the reason for the markup on the
drinks, I am wondering why the higher drink prices mean the waiters are entitled
to a bigger tip. They may be using premium liquors, nicer glasses, have more
expensive furniture, real art on the walls and an expensive musician playing an
expensive house piano..... but why does that make the waiter's labour worth
twice as much?

I will be more concerned about that when those who are overtipped start
declaring the higher amounts :-)
