Louisiana is one option. In the New Orleans area, that would be a good
time to find some wildlife (especially birds) around Bayou Savage or
Jean Lafitte, but you'll need a canoe in either case.
Deer hunting season usually begins right around/after Thanksgiving for
a fairly large area that stretches from North Carolina (around
Asheville) to Pennsylvania (where they give kids the day off of school
on the Monday after Thanksgiving to accommodate the beginiing of deer
season). While you aren't planning on hunting, the two or three weeks
before that are still good times to spot deer and other wildlife
throughout that region (plus, you won't get shot at), so another area
I'd recommend for wildlife (and probably some nice fall colors, too)
would be around Great Smoky Mountains NP.
