In your original post you indicated an interest in outdoorsy stuff. You
could easily spend a day exploring the North Shore, it has plenty of
hiking trails, from the easy to the difficult. It's possible to hike up
Grouse Mountain (only if you're already in good shape) and see excellent
views of the whole city from up top. Or you can take the gondola lift
up Grouse Mountain instead. There are more walking trails up at the top.

Or you could just spend the day in Stanley Park. There's enough in
Stanley Park to please everybody; lots of walking trails, the seawall
promenade, the rose garden, restaurants from burgers to fine dining,
etc. It should be at the top of any Vancouver visitor's list of must sees.
If you like botanical gardens you might also enjoy a visit to VanDusen
gardens. May is the best time to see laburnum trees and rhododendrons in
full bloom.
