In other words, I-40, I-44, and I-55.

Note the part about "very early" and "late night". Sal obviously
meant 15 hours each day for two days. (And mind you, even with two
drivers, 15 hours is a long day. Even if you have all your meals
in the car, you'll still need to stop for gas, washrooms, and such,
and it'll probably take 16 hours just to drive for 15 hours.

In my atlas Dave's suggested route adds up to 2,177 miles and 32 hours 50
minutes, while the route via Denver and Omaha (I-40, I-15, I-70, I-76,
I-80) adds up to 2,087 miles and 31 hours 25 minutes. The same atlas
gives the distance between the two cities as 2,042 miles, so presumably
this distance is achieved by cutting a corner somewhere between two
Interstates, which probably doesn't save any time.

This suggests that Sal's plan is not achievable without some serious
speeding.
